Recipe:

- 30ml blended lightly aged rum

- 30ml dry gin

- 45ml pineapple juice

- 15ml lime juice

- 15ml passionfruit syrup

- 15ml apricot liqueur

- 60ml sparkling wine

Pour the ice cold sparkling wine into a prechilled snifter. Add the remaining ingredients to a drink mixer tin. Fill the tin with 12 ounces of crushed ice and 4 to 6 small "agitator" cubes. Flash blend and open pour with gated finish into the snifter. Garnish with a mint sprig.

A tiki cocktail with sparkling wine? And I actually liked it a lot! Sure, it tastes pretty much as you'd expect - fruity, sparkling, and easy to drink. But it's really, really good, and of course, how distinctive it ends up tasting depends heavily on the spirits you choose.

The rum and gin can definitely be bold here (and the sparkling wine dry), I had great results with the Tanqueray Bloomsbury, which has a beautifully distinctive juniper flavor and is 47.3% ABV. I split the rum, choosing an overproof variety for half of it. It's one of the best 1980s drinks I've ever made - and one that really benefits from natural, fresh, and high-quality ingredients.
