Recipe:

- 1 lime coin (a quarter-size piece of rind with some flesh attached)

- 1 tsp pineapple gum syrup

- 30ml Rhum JM VSOP

- 22.5ml Cynar

- 7.5ml Plantation pineapple rum

- 1 dash Angostura bitters

In a rocks glass, muddle the lime coin and syrup. Add the remaining ingredients, fill the glass with bigger, cracked ice and stir briefly. Garnish with the mint bouquet.

The perfect blend of Ti Punch and Negroni, offering the best of both worlds. Despite being added twice as syrup and rum, the pineapple flavor is slightly subdued, but nonetheless lends a light, tropical smoothness to this otherwise crisp and edgy cocktail. However, I believe that in 8 out of 10 cases, one would not be able to identify the fruit blindly.

Freshly bitter, yet smooth and complex, this is a wonderful drink for those late summer evenings, for example, or for an exciting food pairing. I stirred it briefly on a large, high-quality ice block and then poured it separately over cracked ice to make sure it was really cold and doesn't get too watery.
