Recipe:

- 45ml unaged/lightly aged rum (originally: Bacardi Carta Blanca)

- 45ml coconut water

- 10ml Pedro Ximénez sherry

- 5ml fresh lime juice

- 1 dash rich simple syrup

- 1 drop chocolate bitters (originally: Bob's Chocolate bitters)

THROW all ingredients with ice until sufficiently chilled, strain into a prechilled glass. Garnish: Coconut dust on the side, optional: lime peel.

A very interesting Bacardi Legacy drink, very delicate, very ethereal, calm and serene. A coconut zen moment, but at the same time less actual coconut flavor than you might think. The water doesn't taste particularly like what you would associate with the sweeter coconut taste of the coconut flesh, let alone coconut sweets etc.

The rim is very important here and adds a lot with every sip. Especially in the balance, as the drink itself is rather slightly sour and smooth, similar to the Snake Eyes with lots of coconut water. I would also reduce this to 30ml of coconut water. It doesn't lose any of its character, but it just seems less diluted.
