Recipe:

- 60ml rainwater madeira (preferably Henriques & Henriques)

- 30ml fresh pineapple juice

- 15ml fresh lemon juice

- 15ml simple syrup

- 1 dash Angostura bitters

- 60ml fruited/exotic IPA (preferably Stillwater Nu-Tropic)

Pour the beer into a tiki mug or pilsner glass. Short shake the remaining ingredients with ice for about 5 seconds, then strain into the glass. Fill the glass with ice cubes and garnish with a dehydrated pineapple slice.

DEUTSCH | ENGLISH

A very nice, somewhat atypical exotic specimen. Tiki but in very light and fresh, therefore also in the first, "Fresh & Lively" category in the "Welcome Home" book by Death & Co. I would have liked a little more bite, but if you are using several citrus fruits while mixing anyway, I would advise splitting this one between lemon and lime.

What I like is the preparation method described in the book, it's indeed better to measure out the filler and pour it in first so that it mixes better. If you only pour the beer in at the end, you have to swizzle well so that the whole thing mixes.

In the beginning, the beautiful bright, sweet dried fruits of Madeira, subtle pineapple with the nuttiness of the sweet wine, then the IPA freshness, with a nice bitterness in the finish.
